Greece. They actually had an intellectual side, they thought about things like the soul and mathematical concepts. As a clip I saw in my high school Lit class said, "In the Beginning was chaos, then Euclid arose and there was order" The Romans were soldiers, the Egyptians builders and mystics, the Hebrews, religious fanatics.

The Maya. Not only were they capable of incredible feats of architecture that could rival the Egyptians, a beautiful style of hieroglyphs, predictive sciences that were able to create a calendar that was accurate up until the present age, or a style of art that I feel captures the imagination in a way few Old World societies could, but they managed to do all of this despite several catastrophes, a hostile jungle, neighbours and they even survived the arrival of the Spanish.

Tang China. It was the inheritor of an already ancient tradition and built gloriously on its foundation.
Note that you can't just refer to "the Chinese" as if all of Chinese civilization before 800 CE were the same. There were many different periods of Chinese civilization even before that date. "Ancient China" is not really a single category.

Indus Valley (I wonder why you left it out or perhaps you considered it modern !).
They had a perfect plan for a city in all the detail right down to the plumbing that is almost modern. Perhaps the present pattern of a city (with its central citadel) was their idea

Ancient Egyptians is my favourite civilization because they were significant in mastering art, architecture, and military amongst other things..They also made pottery and a advanced writing system. The ancient Egyptians also created the oldest martial arts, they were wrestling and Kuta[ which is ancient boxing basically) I admire how The Egyptians invented many things, and developed many things as well, that influenced other civilizations such as;- writing, the invention of papyrus which was like paper I think and the use of geometry. Obviously they invented mummification, the 365 day calendar and invented beer and medicine. They were quite advanced for their time.

The Assyrians.
They virtually invented siege warfare and were the first to use ferocity as a deliberate tactic in warfare.
